I love my son’s preschool. The teachers are great and the kids are so sweet. I know that once he enters kindergarten next year, the surrounding will by much different; not so small and not so sheltered. I’m trying to cherish every moment this year.
The parents get an opportunity throughout the year to bring “healthy” treats for special occasions like Thanksgiving, Christmas, and Valentine’s day. It’s fun to see what creative snacks other parents come up with.
Today, we had a “Thankfull” feast at school. Last year I chose to make moon and star turkey sandwiches. This year, I wanted to make something that can be made the day before so I’m not rushing like a mad woman the morning of. I decided to go with chocolate dipped apple bites. For something extra fun, I had my son find me a bunch of sticks, which he does anyway, so I can use them instead of the usual lollipop sticks. These can be treats for any time of the year. It would also be great for a dessert buffet for a party.
Chocolate Covered Apple Bites
Ingredients: (For 24 apple bites)
3 large apples
6 oz chocolate chips
Line a sheet tray with paper towel and layout the apples.
Insert the sticks into the apples.
Melt the chocolate in a bowl set over a pot of simmering water. You can melt the chocolate in the microwave in 15 second increments. I like the double-boiler method. Less chance of burning the chocolate.
Platter on a pretty tray and they are ready to go!
