Apple Fritters

apple fritters I love Pinterest. I was relatively late joining this wonderful platform. I knew of its existence but I didn’t want to join another site when I was already overwhelmed by all the other social media sites. But Pinterest is different. It’s a place where I can organize all the things I love. Which is a great thing for such an unorganized person like me. It’s a place for my “oh, I’ll remember about that later” things, but completely forget as soon as the phone rings or get asked to have a pillow fight by my little guy. It’s a “place” I go at the end of the day after the little one is in bed, the kitchen is clean and I’m in my pajamas. It’s my “me” time, and I treasure it. In that wonderful place, I get my ideas for meals, how to redecorate my home (for the 100th time), find great products, or just look at pretty pictures and be inspired. And best of all, I get to follow others who have similar and great taste like me (ha!).

And from Pinterest, I found this great recipe. My family loves any baked apple goods. I was hesitant to make this since I do not like to deep fry. I don’t like dealing with a vat of hot oil, the greasy aroma filling my house, and not to mention my waistline (and thighs, butt, arms, chin…well, you get the picture) really can do without the extra fat and calories. But this recipe, another one from Martha Stewart, was calling my name. It’s a lot like her buttermilk pancake recipe with the addition of apples. Very similar to the buttermilk pancake muffins except it’s fried! I knew it would be a hit. So unlike my many other pinned items, and overlooking the inconveniences of deep frying, I actually made it. It was delicious. I mean how can you go wrong with hot apples in crispy buttermilk batter that’s rolled in cinnamon sugar?

Only after I made it, and ate it, did I think about drizzling it with chocolate sauce to make it even more scrumptious. Just another reason to make it again. I made it as a dessert but it would also be great for a snack or breakfast (if you dare to deep fry in the morning!).

Apple Fritter Rings by Martha Stewart

Ingredients:

1/2 cup plus 2 tablespoons sugar

3/4 teaspoon ground cinnamon

2 cups buttermilk

4 teaspoons vegetable oil, plus 2 cups for frying

2 large eggs, lightly beaten

2 cups all-purpose flour (spooned and leveled)

2 teaspoons baking powder

1/2 teaspoon fine salt

4 medium tart apples, such as Granny Smith, cored, peeled, and cut into 1/2-inch-thick rings

Directions:

In a medium bowl, combine 1/2 cup sugar and cinnamon. In another medium bowl, whisk buttermilk, 4 teaspoons oil, and eggs. Stir in flour, 2 tablespoons sugar, baking powder, and salt.

In a large, heavy, high-sided skillet, heat 2 cups oil until it registers 375 degrees on a deep-fat or candy thermometer. (The oil should bubble rapidly when a drop of batter is added.) In batches, coat apples in batter and fry until golden brown, about 4 minutes per batch, flipping halfway through. Transfer to a paper-towel-lined baking sheet to drain. Toss apples in cinnamon sugar and serve immediately.
